Bourbon Espresso Boneless Ribs

  • 2 Whole Boneless Pork Loin
  • Olive Oil
  • Seasonello
  • 2 Qts. Molasses
  • 1 Large Jar Duck Sauce
  • 3 Containers Sweet Baby Rays
  • 3/4 Qt. White Vinegar
  • 1 Pint Bourbon
  • 5 Lbs. Brown Sugar
  • 3 Lbs. Finely Chopped Bacon
  • 1 Jar Finely Ground Espresso
  • 1 Bottle Manhattan Coffee Soda



BBQ Sauce:
In a large pot cook bacon until crispy, then deglaze with the bourbon. Cook bourbon down for 2 minutes and then add in the sweet baby rays, molasses, brown sugar, vinegar, duck sauce, espresso, and coffee soda. Cook for 20 minutes stirring often on medium low heat. Remove and let cool.

The Pork:
Clean the loins and cut them into 3rds. Take each piece and cut across it about 1 inch thick and 1 inch deep do not cut all the way thru the loin. Season with olive oil and seasonello and place on grill until grill marks are visible. Remove from grill and place in hotel pans with some of the bbq sauce. Cook covered with foil for 1 hour and 45 minutes.
