Brocolli Rabe In Garlic Oil With Roasted Garlic Cloves (serves 4)
- 2 Lbs Brocolli Rabe – Trimmed
- 1/2 Cup Extra Virgin Oil
- 12 Garlic Cloves
- 1 Tsp. Red Pepper Flakes
- Kosher Salt To Taste
Blanch broccoli rabe in salted water for 2 minutes until bright green. Remove from water and “shock” in ice water to stop cooking process. Remove and place in large mixing bowl.
In a large saute pan heat olive oil and garlic cloves until garlic is golden brown and soft (do not over cook as garlic will become bitter). Remove finished cloves from oil and set aside.
Shut off heat under oil and add red pepper flakes, let steep 30 seconds.
Toss broccoli rabe with warm garlic oil, add salt to taste and place on a platter. Top with roasted garlic cloves and serve.
