Mussels Marinara With Shaved Toasted Garlic (serves 4)

  • 4 Lbs. Mussels
  • 1/4 Cup Olive Oil
  • 1/2 Cup Dry White Wine
  • 2 Jars Uncle Giuseppe’s Marinara Sauce
  • 1/2 Cup Chopped Flat Leaf Parsley
  • 8 Cloves Garlic – Sliced Thin



In a large saute pan heat olive oil on medium heat – add half shaved garlic and saute 1 to 2 minutes until golden brown (do not burn). Remove garlic from pan with a slotted spoon reserving oil.

Add mussels and white wine into pan and let cook 1 minute. Add Uncle Giuseppe’s marinara sauce, cover and let cook 5 to 6 minutes until mussels open (discard any mussels that do not open).

Serve in a deep bowl and top with chopped parsley and remaining toasted garlic shavings.
