Teriyaki Salmon (serves 4)
- 4 Salmon Filets – 6 Oz. Each
- 1 Cup Teriyaki Glaze
- 1/2 Lb Shiitake Mushrooms, stemmed, sliced
- 1/4 Cup Olive Oil
- Salt & Pepper To Season
Paint salmon filets with olive oil and season lightly with salt and pepper.
Pre heat grill – grill salmon 2 minutes – turn with spatula 1/4 turn to make crosshatch marks – grill 1 minute longer.
Remove from grill and coat with teriyaki glaze then place in 350 degree oven for 15 minutes until cooked through.
In a bowl, toss sliced mushrooms with rest of olive oil and lightly season with salt and pepper. Roast in oven 15 minutes until softened.
Plate 1 piece salmon and top with roasted shiitake mushrooms.
Lightly heat teriyaki glaze and drizzle over salmon.
