Shrimp & Calamari Salad


Ingredients

1 Yellow Pepper (cut into 1/2″ strips)

1 Red Pepper (cut into 1/2″ strips)

1/2 celery head, sliced

3 cloves of garlic, minced

1 bunch parsley, finely chopped

1/2 cup fresh squeezed lemon juice

1LB calamari, cut into rings and tentacles separated

1LB 21/25 aw shrimp, tails off

1/2 cup blended oil

Salt and pepper to taste

Directions

1. Bring salted water to a boil

2. Boil the calamari and shrimp for 60 seconds

3. Remove and immediately put into an ice bath to stop the cooking.

4. Combine calamari and shrimp with other ingredients in a large bowl
