Quick Answer: Whipped Gorgonzola with Warm Fig Compote is made by blending room-temperature CasArrigoni Gorgonzola Dolce DOP with mascarpone and heavy cream until silky, then topping it with dried Black Mission figs simmered in orange juice, aged balsamic vinegar, honey, and orange peel. Toasted walnuts, fresh thyme, flaky sea salt, black pepper, and grilled garlic bread complete the appetizer.

INGREDIENTS
Whipped Gorgonzola
CasArrigoni Gorgonzola Dolce DOP – 8 oz
Mascarpone – 4 oz
Heavy Cream – 2 tbsp, plus more as needed

Warm Fig Compote
Dried Black Mission Figs – 1 cup, stemmed and quartered
Fresh Orange Juice – ½ cup
Aged Balsamic Vinegar – 1 tbsp
Honey – 3 tbsp, divided
Orange – 1, peel removed in one wide strip

To Finish
Walnuts – ⅓ cup, roughly chopped
Fresh Thyme Leaves – 1 tsp
Flaky Sea Salt – ½ tsp
Freshly Cracked Black Pepper – ¼ tsp

Grilled Country Bread
Country Bread – 8 slices, ¾-inch thick
Extra-Virgin Olive Oil – 2 tbsp
Garlic – 1 clove, halved

INSTRUCTIONS
Toast the Walnuts

Step 1: Place the roughly chopped walnuts in a dry skillet over medium heat.

Step 2: Toast for approximately 3 minutes, shaking or stirring the skillet occasionally so the walnuts cook evenly.

Step 3: Immediately transfer the toasted walnuts to a plate so they stop cooking. Set aside.

Make the Warm Fig Compote

Step 4: Combine the quartered Black Mission figs, fresh orange juice, aged balsamic vinegar, 1 tablespoon honey, and the wide strip of orange peel in a small saucepan.

Step 5: Bring the mixture to a gentle simmer over medium heat.

Step 6: Simmer for 6–8 minutes, stirring once or twice, until the figs are plump and the liquid becomes glossy and syrupy.

Step 7: Remove and discard the orange peel. Keep the fig compote warm.

Whip the Gorgonzola

Step 8: Add the CasArrigoni Gorgonzola Dolce DOP, mascarpone, and 2 tablespoons heavy cream to a food processor.

Step 9: Pulse briefly to combine, then process continuously for 30–45 seconds, scraping down the bowl once, until the mixture is silky, smooth, and pale lavender.

Step 10: For a softer consistency, add another small splash of heavy cream and process until incorporated.

Grill the Bread

Step 11: Brush both sides of the country bread slices with extra-virgin olive oil.

Step 12: Grill or pan-toast the bread for approximately 90 seconds per side, or until charred, crisp, and golden.

Step 13: While the bread is still hot, rub each slice with the cut side of the garlic clove.

Plate & Serve

Step 14: Dollop the whipped Gorgonzola onto a wide, low serving platter.

Step 15: Use the back of a spoon to spread the cheese into a long swoosh, leaving a shallow channel through the center.

Step 16: Spoon the warm fig compote into the channel.

Step 17: Scatter the toasted walnuts and fresh thyme over the platter.

Step 18: Drizzle with the remaining 2 tablespoons honey.

Step 19: Finish with flaky sea salt and freshly cracked black pepper.

Step 20: Arrange the grilled garlic bread around the edge of the platter and serve immediately.
