- 3 pounds broccoli rabe
- ¼ cup peeled garlic
- ½ cup extra virgin olive oil
- Juice from ½ lemon
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Remove ¼ inch off the bottom of the broccoli rabe stems and some leaves depending on how bitter you like the broccoli rabe. More leaves removed, less bitter.
Steam broccoli rabe for 3-4 minutes or until broccoli rabe takes on a bright vibrant green color.
In a medium sauté pan, heat olive oil on medium high heat.
Add garlic cloves and turn often to avoid burning; should be slightly browned. Sauté for 2-3 minutes.
Toss steamed broccoli rabe with garlic and oil. Squeeze in fresh lemon juice.
Season with salt and pepper.
