Calamari Arrabiata

INGREDIENTS:
1lb calamari (cut in to rings)
2 qt oil (for frying)
2 cup flour
1 cup cherry peppers
Tsp salt
½ tsp pepper
1 tsp garlic (chopped)
2 tbs olive oil
2 cup marinara
2 tbs red wine vinegar

Directions
1. Start by placing the cut calamari and ¾ cup of cherry peppers in a bowl, season with salt and pepper and mix well.
2. Add the flour to the bowl and mix well until all the calamari is fully coated.
3. Heat oil to 350 degrees and gently add the calamari to the oil in batches. (DO NOT ADD ALL AT ONCE OR THE OIL WILL BOIL OVER)
4. Once the calamari has reached a golden color remove from oil, season with salt and set aside.
5. In a sauté pan, heat olive oil, add the garlic and sauté until the garlic is golden brown.
6. Add the marinara to the sauté pan and bring it to a simmer.
7. While the sauce is heating chop the remainder of the cherry peppers and add them to the sauce with the red wine vinegar.
8. Once the sauce is at a simmer add the fried calamari and toss until it is fully coated with the sauce.
