Italian Dry Rubbed Wings
These crispy garlic parmesan wings are a game day must-have! Marinated in fresh lemon and garlic, fried until golden brown, and tossed in Pecorino Romano with Italian herbs and spices. This is Uncle Giuseppe’s way to make wings that disappear fast.

Ingredients
12 ea. Chicken Wings
ÂĽ cup Lemon Juice
5 cloves Garlic
1 tbs. Salt
½ tsp Black Pepper
½ cup Pecorino Cheese
1 tbs. Garlic powder
1 tbs. Onion powder
1 tsp Parsley (Dried)
1 tsp. Oregano (Dried)
1 tsp. Red Pepper Flakes
2 qt oil for frying

Directions
1. In a bowl/container, place the wings, salt, black pepper, lemon juice, and garlic.
2. Mix until all ingredients are fully incorporated.
3. Cover and refrigerate for at least 2 hours (the longer the better).
4. Once the wings are fully marinated, drain the wings, remove the garlic, and pat dry with paper towels.
5. In a heavy bottom pot heat oil to 350 degrees.
6. Carefully Place the wings into the oil and fry until the internal temperature is at least 165 degrees and a golden-brown color is achieved.
7. Once the wings are cooked, remove them from the oil and drain completely.
8. Wings must be HOT OUT OF THE OIL for next steps.
9. Place the wings directly into a large mixing bowl and add the pecorino cheese, garlic powder, onion powder, dried parsley, dried oregano and the red pepper flakes.
10. Mix until the seasoning fully and evenly coats the wings.
