RED WINE-POACHED PEARS INSTRUCTIONS
Build the Poaching Liquid

Step 1: Combine the red wine, star anise, cinnamon sticks, vanilla extract and sugar in a saucepan wide enough to hold the pear halves in a single layer. Bring the mixture to a bare simmer and stir until the sugar has completely dissolved.

Poach the Pears

Step 2: Place the pear halves cut side down in the poaching liquid. Simmer gently for 20 to 25 minutes, turning once, until a knife slides into the shoulder of each pear with slight resistance. Keep the fruit firm enough to hold the mascarpone when plated.

Cool the Pears

Step 3: Remove the pan from the heat and allow the pears to cool to room temperature while fully submerged. Cooling them in the liquid helps the pears develop their rich color.

Reduce the Syrup

Step 4: Lift the cooled pears from the pan. Return the poaching liquid to the heat and reduce it until it visibly coats the back of a spoon. Remove the star anise and cinnamon sticks. The syrup will continue to thicken as it cools.

Plate the Pears

Step 5: Place one cooled pear half on each plate. Add a generous scoop of vanilla mascarpone to the cored hollow.

Finish and Serve

Step 6: Crumble the Brutal Blue over the mascarpone in large, irregular pieces. Scatter with chopped pistachios, spoon the reduced syrup across the plate and garnish each serving with three small mint tips. Serve immediately.
